Tsuriaji (Jack Mackerel) is also known as Horse Mackerel. The Tsuriaji we carry are caught by fishing line and are of much higher quality than the ones that are caught by net. Many sushi chefs cure it with salt and vinegar, then garnish the top with minced ginger. This is also in the "hikarimono" category.   Sizes can really vary on Tsuriaji but we will request sizes between 0.3-0.6LB.  However, there will be instances where it will be smaller or larger than quoted.
